2、虾米要尽量泡软,和豆豉一起尽量剁碎,这样和水蛋同蒸后,才不会影响水蛋嫩滑的口感。j|^ p1v

4、为了避免水蒸汽滴入蛋液上,使水蛋表层凹凸不平,因此要给其盖上一层保鲜膜。6{5L-|4?&fgB^
5、蒸水蛋一定要用小火慢蒸,不宜开大火,否则水蛋容易过老,表面会呈蜂窝状;蒸至蛋液表面凝固,轻轻敲动盘边无晃动感即成。
