水煮鲈鱼
鲈鱼一条,花椒,干辣椒,芽菜,姜,蒜,鸡蛋xE9oEw/V

1、鲈鱼洗净,起肉,鱼骨剁成小块待用,鱼肉从尾部起切,切成薄的连刀块;

2、鱼片加盐,鸡粉,料酒,生粉,蛋清用手拌均匀,腌约30分钟左右,备用;z'f$](feY4pD

3、芽菜用沸水焯淋铺于大盘底;

4、下油锅,爆香姜和蒜,下鱼骨炒,加少许盐,料酒,鸡粉,椒盐,再加约两碗水煮至汤变白;P [^y2xDfU V!}'y

5、煮好的鱼骨全部倒于盛有芽菜的盘子里;

6、洗净锅后,下少许油炒花椒,等那种麻辣的味道飘出,再加适量的油(我用了一碗半左右的油),再加入干辣椒,用中火煮约五分钟,等花椒与干辣椒的辣味全出;

7、把腌好的鱼片倒入辣椒油里,马上关火,让油的余热泡熟鱼片;xx
